Soccas are chickpea flour pancakes eaten in the South of France and they are SO GOOD!

  • Soccas layered with Mediterranean spiced beef, topped with lemon, radish, pine nut, mint and feta 
  • Learn how to make simple homemade salad dressings (simple balsamic, sautéed shallot, and/or lemon vinaigrette)
  • Explore the principles behind composing a craveable salad

Skills we'll practice: flavors and textures, pancakes, sautéing, browning, salads, dressings

pastas reimagined

In this lesson we'll learn to make three easy and unique pastas that have been reimagined with a unique spin: 

  • lemony garlic + greens - red lentil pasta with garlic, lemon zest, greens, pine nuts, and a secret ingredient
  • all-veggie pad thai - a variety of "noodles" all made from vegetables (red cabbage, carrots, collard greens, etc) with an amazingly delicious (and easy) sauce, plus some tofu and crunchy nuts on top
  • easy week-night dinner - quick and tasty tomato-meat sauce with zucchini noodles - it's so simple and tasty, you might just make it every night!

Skills we'll practice: knife skills, veggie prep, flavor pairings, sauces, sautéing, chef timing

Fish Soups + Stews three ways

In this lesson I'll teach you how to use a "base recipe" three different ways for three different dishes - Brazilian, Italian, and French tomato-based fish stews (all delicious!)

On the menu:

  • Brazilian fish stew - green peppers, coconut milk, lime
  • Italian fish soup - celery, onions, white wine, peppercorns, served with crusty bread and aioli
  • French fish stew - white wine, capers, lemon, dijon, served with toasts

Skills we'll practice: knife skills, braising/soups, flavor balancing, format cooking
